The scoop
Medici Roasting (long known as Caffè Medici) has roasted and served specialty coffee in Austin since 2006, growing from a single Clarksville cottage café into six locations across the city, including a roastery at Springdale General. Expect house-roasted single-origin and blend coffee, espresso drinks, and pastries, plus a laid-back, dog-friendly patio at the original West Lynn location.
Michael and Alison Vaclav, who met years earlier at a UT-area espresso bar, opened the first Caffè Medici in a converted historic house on West Lynn Street in Clarksville in 2006, naming the company after the Renaissance-era Medici family and its motto "Festina Lente" (Make Haste Slowly). The retail brand has since been presented as Medici Roasting and expanded to six Austin cafés, including a dedicated roasting facility at Springdale General in East Austin and an outpost inside Austin-Bergstrom International Airport.
